In a blender, combine the eggs, milk, flour, salt, and vanilla extract. Blend on high speed until the mixture is smooth and well combined.
Carefully pour the batter over the melted butter and fruit in the baking dish.
Bake for approximately 25 minutes, or until the pancake is puffy and golden brown.
