Protein Puff Pancake

This Protein Puff Pancake or German Pancake is sure to become a family favorite. Made quickly with basic pantry ingredients it tastes as good as it looks.

  • 9 x 13 Baking dish

Ingredients
  

  • 6 eggs
  • 1 cup milk
  • 1 cup flour
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 5 tablespoons butter
  • 1 cup of your favorite fruit optional, but highly recommended

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Place the butter in a 9x13 baking dish and melt it in the oven while it preheats. Once the butter is partially melted, add your chosen fruit to the dish and allow it to start cooking.
  • In a blender, combine the eggs, milk, flour, salt, and vanilla extract. Blend on high speed until the mixture is smooth and well combined.
  • Carefully pour the batter over the melted butter and fruit in the baking dish.
  • Bake for approximately 25 minutes, or until the pancake is puffy and golden brown.
  • Serve hot, topped with your favorite syrup or toppings.
